Crustless Quiche

Crustless Quiche

Packed with protein and super versatile!

Ingredients

  • 6-7 eggs
  • 1 cup heavy cream (or coconut cream!)
  • 1-2 cups spinach or mushrooms or turkey bacon
  • 3/4 cup of shredded cheese
  • 1/2 tsp minced garlic
  • salt and pepper to taste

Instructions

  1. lightly sauté veggies/ bacon in butter and garlic
  2. meanwhile in a separate bowl whisk eggs and heavy cream well
  3. add veggies to bottom of a greased pie plate or 8x8 baking dish
  4. add a layer of cheese
  5. pour egg mixture over top.
  6. bake 35-45 minutes at 375°F. until cooked through
