Seriously Easy Instant Pot Whole Chicken Soup

Simple and delicious
Ingredients
- 4-5 lb organic organic whole chicken
- 4-6 carrots, sliced or chopped
- 4-6 celery stalks, sliced or chopped
- 1 medium onion, chopped
- 4 cups really good chicken broth or stock
- 2-4 cups of water (enough to cover the chicken)
- 1-2 tsp minced garlic
- good sea salt to taste (don't skimp)
- herbs and spices! (your choice--try oregano, basil, bay leaves, Italian seasoning, onion powder, pepper, mustard powder.... whatever you like)
- 2 tablespoons of good fat :butter, olive oil, avocado oil, ghee....
- pasta or rice of choice
Instructions
- Prepare you chicken (remove innards, trim excess skin/fat (definitely leave most of the skin though!)
- Salt the whole chicken and set aside
- Set the Instant pot to Sauté
- Add oil/butter. Sauté the onion, carrots, and celery under slightly tender
- Move veggies to the sides of pot and add whole chicken
- Add broth and water and spices
- Pressure cook on high 20 minutes. Allow a 10 minute release
- Carefully remove the chicken and debone and deskin
- While deboning the chicken add pasta or rice of choice. You may want to only add the pasta or rice to the soup you'll be eating immediately. Leftovers store better without the pasta or rice.
- Replace deboned chicken to soup and warm through.
- Serve with really good sourdough bread
Notes
Cook time includes time for Instant Pot heat up. Instant Pots vary so time may need to be adjusted.
Prep time includes chopping AND deboning the chicken and are just estimates.
