No-Bake Energy Bites
Yield: ~ 20 bites
A perfect pick-me-up to support energy and blood sugar!
Ingredients
- 1 cup old fashioned oats
- ½ cup nut butter (I like almond or cashew butter!)
- ½ cup flaxseed
- ¼ cup choc chips {optional}
- ¼ cup honey {optional}
- 1 Tbs coconut oil
- 1-2 Tbs chia seeds
- 1 tsp vanilla
Instructions
- Stir all ingredients together in a large mixing bowl until thoroughly combined
- Cover the mixing bowl and chill in the refrigerator for 1-2 hours, or until the mixture is cold through-out {this will help the balls hold their shape!}
- Roll into 1-inch balls
- Enjoy immediately! Or refrigerate in a sealed container for up to 1 week, or freeze for up to 3 months
