No-Bake Energy Bites

Yield: ~ 20 bites
A perfect pick-me-up to support energy and blood sugar!

Ingredients

  • 1 cup old fashioned oats
  • ½ cup nut butter (I like almond or cashew butter!)
  • ½ cup flaxseed
  • ¼ cup choc chips {optional}
  • ¼ cup honey {optional}
  • 1 Tbs coconut oil
  • 1-2 Tbs chia seeds
  • 1 tsp vanilla

Instructions

  1. Stir all ingredients together in a large mixing bowl until thoroughly combined
  2. Cover the mixing bowl and chill in the refrigerator for 1-2 hours, or until the mixture is cold through-out {this will help the balls hold their shape!}
  3. Roll into 1-inch balls
  4. Enjoy immediately! Or refrigerate in a sealed container for up to 1 week, or freeze for up to 3 months
